Chipotle Tomatillo Salsa Recipe

This is a great salsa recipe to eat with chips, but it is also good on chicken and fish.

Chipotle Tomatillo Salsa


1-lb Whole tomatillos (husked)
1-Tsp extra virgin olive oil
1-Small red onion (small)
1/2 Cup fresh cilantro (minced)
2-Canned chipotle chiles (minced)
1-Tbs vinegar (white)
1-Tsp dried Mexican oregano
1/2-Tsp salt


1. Broil tomatillos for 15 minutes (turning occasionally) tomatillos will be soft with dark spots
2. Cool
3. Heat oil and sautee onions for 5 minutes
4. Finely chop tomatillos, place in a small bowl, and add onions
5. Add the rest of the ingredients, stirring
6. Eat warm or cold
