| 1-lb Whole tomatillos (husked) |
| 1-Tsp extra virgin olive oil |
| 1-Small red onion (small) |
| 1/2 Cup fresh cilantro (minced) |
| 2-Canned chipotle chiles (minced) |
| 1-Tbs vinegar (white) |
| 1-Tsp dried Mexican oregano |
| 1/2-Tsp salt |

Recipe: |

| 1. Broil tomatillos for 15 minutes (turning occasionally) tomatillos
will be soft with dark spots |
| 2. Cool |
| 3. Heat oil and sautee onions for 5 minutes |
| 4. Finely chop tomatillos, place in a small bowl, and
add onions |
| 5. Add the rest of the ingredients, stirring |
| 6. Eat warm or cold |
