Should I wrap spare ribs in foil while smoking?

Question Submitted by Brian:

Do I wrap the ribs in foil while cooking?

Would wrapping the ribs in foil for the last 2 hours help them stay moist?

Answer:

Hello Brian.

I think you have got the smoking down! Smoke the ribs at 275 for 4 hours, spraying every 45 minutes. During hour 5, lay foil under the ribs, soak them with the spray mop, and wrap them for hour 5. The result will be the most tender ribs you will ever sink your teeth into. The bone will fall out! Send me some pics too.
