Ingredients:
3-Large pork chops (trim off fat & cut into 1/2 inch or a
little smaller cubes)
1-lb Ground beef
1-Pkg Flour tortillas
1-7oz. Can chopped green chilies
1-4oz. Can chopped jalapenos (less for less heat)
1-Large chopped onion
1/2-Cup Flour
1-28oz. Can whole pealed tomatoes with/liquid
Seasonings For Sauce :
(doubled: one mix for pork, and one for beef)
1-Tsp Salt
1-Tsp Pepper
1/2-Tsp Oregano
1-Tsp Garlic
1-Tbsp Cumin
Toppings:
Grated cheddar cheese
Shredded Lettuce
Diced Fresh Tomatoes
Recipe:
1. Mix flour with first batch of the above seasonings
2. Roll pork chunks in it
3. Heat a large and heavy pan on med/high
4. Add a little bit of oil in the pan to coat bottom
5. Add pork and brown it
6. After pork is browned, add canned tomatoes with/liquid-squishing
them into small pieces
7. Add green chilies & jalapenos & turn heat down to low
8. Stir often and add water if too thick (or add a can of Rotel
tomatoes with/green chilies)
9. Simmer for an hour stirring often
10. In another fry pan, brown ground beef
11. Add 2/3 of chopped onion & add second batch of seasonings
12. Simmer a few minutes
13. Heat tortillas
14. Fill with cheese & ground beef
15. Roll, and Top with pork & sauce, cheese, lettuce, tomatoes,
onion, sour cream
16. Serve with guacamole
