Ingredients:
1-lb. Ground beef
2-Tbsp Oil
1-Large baking potatoe (peeled then diced into 1/2" squares
or a little smaller)
1-Yellow onion (finely chopped)
1-Green bell pepper (finely chopped)
1 to 2-Cans Rotel diced tomatoes w/green chili
1-Tsp Salt
2-Tsp Ground cumin
1-Tbsp Chili powder
1-Tsp Pepper
1-Tsp Garlic powder
1/2-Tsp Oregano
Flour tortillas
Recipe:
1. Heat large fry pan on medium/low & add oil
2. Saute onion and bell pepper until onion is translucent
3. Push onion and pepper to one side, and add ground beef
4. Brown meat until done and mix with onion and peppers
5. Add seasonings and mix together
6. Spread an even layer of raw diced potatoes on meat
7. Pour tomatoes over all
8. Cover and simmer on med heat until potatoes are tender
9. Heat tortillas over med. heat in heavy pan
10. Serve Peccadillo rolled in tortillas with cheddar cheese
and sour cream(optional) |
